Luxury Afternoon Tea in the Comfort of your Own Home

All that is needed is a selection of delicious cupcakes, a few choice sandwiches (cucumber if you are being pedantic) and your favourite tea, we would recommend a lovely cup of Earl Grey – there you go! you will have yourselves a perfect afternoon tea. And if you wanted to go all out, why not turn your afternoon tea into a champagne afternoon tea and treat yourself to your favourite bottle of bubbly. 
Here is a tried and tested vanilla cupcake recipe, which is loved by all who eat them. It is so easy to follow and very hard to get wrong. 
You will need:
Cupcakes:

4oz softened butter
4oz caster sugar
4oz self raising flour
2 eggs
1tsp vanilla extract
Buttercream Icing:
5oz softened butter
10oz icing sugar
1-2 tbsp milk
a few drops of food colouring (optional) 
Method:

Preheat over to 180C/350F/Gas 4 and line 12 hole muffin tin with paper cases.
Mix ingredients in a bowl (easier with an electric whisk but works by hand) for a few minutes. Make sure all ingredients are mixed in well. 
Spoon mixture into cases, until half full (make sure there is enough left over to test!)
Bake in the oven for 10-15 minutes or until golden brown on top and a skewer inserted into one of the cakes comes out clean. 
Remove from tin and leave to cool. 
For Buttercream:

Beat the butter in a bowl until soft, add half the icing sugar and beat until smooth.
Add the remaining icing sugar with the milk until the mixture is smooth and creamy. 
Add the food colouring if you want coloured butter cream and mix until well combined. 
Spoon mixture into a piping bag and pipe the icing onto the cupcakes.
